Lecithin is a general term for fatty extracts that contain phospholipids and are miscible in water. Beneficial biological compounds such as phosphatidylcholine and essential fatty acids are commonly found in lecithin. Phosphatidylcholine is converted to acetylcholine, a neurotransmitter involved in learning and memory.
